Pick crisp, juicy, balanced-sweet apples like Honeycrisp, Ginger Gold, or Gala. You want a loud crunch and a clean finish.

Firm-fleshed apples that hold shape under heat: Granny Smith, Mutsu, Baldwin, and Golden Gem. A tart apple balances sugar.
